Apple Cranberry Walnut Muffins (although I’m still tweaking this one)

2 cups all purpose flour
3 T baking powder
1/2-1 cup sugar in the raw (depends on your taste, mine was about 2/3)
1 tsp salt
1 t/T cinnamon (depending on how spicy you want it)

Mix dry ingredients in large mixing bowl. Make well in center. Then add

1 cup millk
1 egg
3 T oil (not sure about this one, I have to check to make sure it is 3 T)

Mix until just combined (i.e. all dry ingredients are wet). Batter will be lumpy.

Mix in aprox
1/2 cup dried cranberries
1/2 cup walnut halves (smash them after measuring)
1 grated apple

Fill greased muffin pan. Bake at 400 degrees in preheated oven for 20-30 minutes.
